The cow is a reference to the Cradle of War expansion pack of the main game, whose acronym (CoW) the community playfully latched onto. Within official streams, any mention of the expansion's name is followed by numerous cow emojis.
To bring this community insider to life the official EVE Online channel came up with the idea to let a real cow control a spaceship within the game. The event took place on a farm in iceland called "Gunnbjarnarholt" which featured a special gamepad for the cow aka CapitalCowPilot.
